Although this recipe is from my Mom’s “recipe pile,” it is not Slovak. She always loved lemons though, so it’s no surprise that she had a recipe for this Lemon Bar dessert! And as most of the recipes I have shared thus far have been fairly simple to make (because of my current condition), this recipe is also fairly simple, yet very DELICIOUS! INGREDIENTS
For "crust:" 2 cups flour 1 cup butter, softened For "next step:" 4 eggs, well-beaten (or 1 cup EggBeaters) 2 cups sugar 5 tablespoons lemon juice ¼ cup flour ½ teaspoon baking powder For "final step:" ½ cup powdered sugar DIRECTIONS 1. Mix together the 2 cups flour & 1 cup softened butter. 2. Bake in a 13” x 9” pan for about 30 minutes at 350 degrees. 3. Mix eggs (or EggBeaters), sugar, juice, flour and baking powder. 4. Pour over baked crust. 5. Return to oven for 40 minutes (till the top doesn’t jiggle). 6. Allow to cool. 7. Top with powdered sugar. 8. Enjoy!!
